Easy Chocolate Chip and/or Peanut Butter Macaroons
5 cups flaked unsweetened coconut
3 egg whites
½ cup sugar
¼ tsp vanilla
2/3 cup mini chocolate chips (or mini peanut butter chips)
Preheat oven to 325. Beat the egg whites until fluffy; you may have to add a little more egg whites. Gently mix egg whites into all the other ingredients and scoop into mounds (I use a teaspoon). Line a baking sheet with parchment paper. Bake about 15 minutes until golden brown. Let them cool and enjoy.
